Our star country for this week is India.

India is a diverse country, but this statement is not limited to the people in the country or their religion, it is also its cuisine. 
Indian cuisine is one of the most unique and famous cuisines worldwide. Indian cuisine is a rich cooking tradition that spans India's vast regions, each with its unique flavors, ingredients, and culinary techniques. India is a land of spices that makes these delicious cuisines. 
Curry is one of the most common and vibrant dishes in Indian cuisine. 
Curry is a broad term that comprises a wide variety of dishes with different ingredients, spices, and cooking methods, reflecting the diverse regions and communities across India. 
Indian curries have gained international popularity, influencing global cuisine. Dishes like Chicken Tikka Masala, which originated in the UK, demonstrate the global appeal and adaptability of Indian curry culture.

But are Indian Curries suitable for Veganism?
The answer is Yes! 
Though Veganism is a relatively new concept in India, many traditional dishes in India are inherently vegan.
Most of the Indian curries are naturally Vegan. Vegan curry reflects India's rich tradition of plant-based cooking.

There are many substitutes available for different ingredients in India such as:
  • Paneer can be replaced by tofu, which is a very commonly used vegan substitute.

  • To replace Yogurt in the curry that uses this product, Coconut milk is the substitute that is used in those types of curries that
    make it vegan.
  • Cream in the curry can be replaced by Cashew Cream to give it the same texture and flavor as the normal cream.
     




Some of the traditional vegan curries are:
  • Chana Masala: This is a popular North Indian curry made with chickpeas (chana), tomatoes, onions, and a blend of spices. It is naturally vegan and is often enjoyed with rice or Indian breads like roti or naan.
  • Aloo Gobi: Aloo (potato) and gobi (cauliflower) are cooked together with tomatoes, onions, and spices. This dish is a staple in many Indian households and is vegan.
  • Baingan Bharta: This dish is made from roasted eggplants mashed and cooked with tomatoes, onions, and spices. It is a flavorful and smoky vegan option.

  • Dal: Various types of lentil curries (dal) are a significant part of Indian cuisine. Many dal recipes are vegan, such as Tadka Dal, which is lentils cooked with a tempering of spices, garlic, and onions.
  • Sambar: A South Indian staple, sambar is a lentil-based stew cooked with various vegetables, tamarind, and a special spice blend. It is usually served with rice or dosa (a type of fermented crepe).

Vegan curry culture in India is rich and varied, rooted in traditional practices and modern adaptations. It reflects the country's diverse culinary heritage and its evolving dietary trends. Whether through traditional vegan dishes or innovative substitutes for animal products, veganism is becoming an integral part of India's food landscape
